An industrial dishwasher includes a first lower rack (1), upper and lower wash sprinklers (2, 3) fed by a wash pump (4) through respective wash ducts, upper and lower rinse sprinklers (9, 10) fed through respective rinse ducts with hot water coming from a heater (8), two valves (13, 14) located in the wash tank and respectively connected to the upper ducts of the wash and rinse circuits, as well as a second upper rack (1') provided underneath with a relevant support system that carries an additional wash sprinkler (15) and an additional rinse sprinkler (16) provided with respective ducts (17, 18) suitable for connection of the additional sprinklers (15, 16) to said valves (13, 14) when the second upper rack (1') is introduced in the wash tank. In this way, it is possible to carry out the wash of cups and glasses in absolute safety, since the addition of a third sprinkler implies a decrease of the flow rate and pressure of the sprinklers by approximately 30%, and there is obtained a greater efficiency and flexibility of use of the dishwasher since in a single wash cycle it is possible to double the load of cups and glasses with respect to a conventional industrial dishwasher.
