Soluble roasted chicory powder with an inulin and fructooligosaccharide content above 40% (dry weight basis) is new. An Independent claim is also included for a process for producing soluble roasted chicory powder, comprising drying fresh chicory roots, roasting the roots at 130 deg C and low humidity, cooling and crushing the roots, extracting the chicory with hot water, and spray drying the extract.
